Brie and Apple Pecan Bites from Living Well Kitchen

They are easy to make little bites of cheesy, apple, nutty deliciousness. I love them a lot a lot.

You can make these in the toaster oven or a real oven, so they are great for when your oven is full of turkey and sides.

I love how adorable and fun they are. Plus, they have easy to find ingredients and are a good option for any time of year.

I made these for Friendsgiving on Sunday {by the way, there’s still time to make a full Thanksgiving meal with the help of my Procrastinator’s Guide to Thanksgiving}, and they were a hit.

They are the perfect starter in my opinion. Cheesy, sort of sweet but also salty, bite sized packages of yumminess

Ingredients

  • 1 small apple, diced
  • 1 TBSP honey
  • 1 tsp fresh lemon juice
  • 1/3 cup pecans, chopped
  • 4 oz. Brie
  • 2 packages mini phyllo cups

Instructions

  1. Preheat the oven to 400ºF.
  2. Stir together the diced apple, honey, lemon juice, and pecans. Set aside.
  3. Dice the Brie into small cubes {that will fit in the mini phyllo cups}; you can leave the rind on.
  4. Put the phyllo cups on a baking sheet. Add a cube of Brie to each phyllo cup. Top with a teaspoon or two of the apple-pecan mixture.
  5. Bake in preheated oven for 8-10 minutes until cheese is melted and phyllo cups are lightly browned.

Notes

Any apple will be good in here. I used green apples, but use whatever you have. If you have leftover apples, just add them to the apple crisp. Walnuts would make a great substitute for the pecans. If you don’t have lemon juice, you can just omit it. It adds great flavor but it’s not mandatory.
