After a few days of eating leftovers, I get a little bored. Since I hate wasting food, it makes a lot more sense to reinvent my leftovers instead of throwing them away.
Tossing out a sweet potato casserole makes me feel sad, but how many days of sweet potato casserole can you really enjoy? And most recipes with leftover sweet potato casserole involve flour, sugar, butter, and other things that make me feel full thinking about them.
I decided there had to be a better way to enjoy my leftover that didn’t involve more sweets or butter or whatever my body had a little too much of over the holiday week.
This frittata uses leftover sweet potato casserole in place of milk to help it thicken up with extra vitamins and flavor. I like the contrast of the sweet potatoes with the roasted vegetables. I love sweet and savory things.
This frittata couldn’t be much easier and is a breeze to make. You only need 5 ingredients to make it, and it is an excellent way to use up leftovers (even if they aren’t from Thanksgiving or another holiday meal).
I serve mine with leftover cranberry sauce if I have some. Or use hot sauce or salsa. Sometimes I’ll just sprinkle with salt & pepper and dig in!
